Spring is in the air! This past Thursday, we got a jump-start on this upcoming season with some colorful and eye catching trends! Hosts, Apryl Churchill of Neiman Marcus Northpark and DFW Style Daily’s Editor, Lisa Petty, led the fashionable crowd in a special fashion presentation with looks from Lafayette 148 .

Models clad in the designer line sported the latest and greatest of their Spring 2012 Collection all in the spirit of Neiman’s Top Ten Spring Trends. Lafayette 148 New York Design Director Edward Wilkerson describes his latest collection as a union of American sportswear and Italian prep a.k.a-”pairing everyday chic style with youthful vivacity, and infusing postcard-perfect touches.” Setting precedence to a theme, “there’s a print for every season,” this spring collection resonates from the colors and landscape of the beautiful Isle of Capri (Italy).

This season its all about the graphic prints, nautical detailing, flowy wide-leg pants, and colorful shades of beach tranquility-coral, red, blue, white, yellow, green, and purple. Along with the beautiful prints and colors, comes some major accessorizing-big dramatic earrings, bangles, bright scarves and clutches, wedges/heels, and of course some shiny silver and sparkly gold for the feet! (FYI…don’t be afraid to mix your silver and gold together this season!). With a fresh and fashionable look, your loveliness will also shine through with a new spring face! Texas Sopapilla Cheesecake

2 cans of crescent rolls

1½ cups of sugar

1 teaspoon vanilla

1 Tablespoon of cinnamon

2 (8oz.) packages of softened, cream cheese

1 stick of butter

Preheat oven to 350. Press 1 can of crescent rolls into bottom of 9X13 inch pan. Mix cream cheese, 1 cup of sugar, and vanilla until creamy. Spread over rolls in pan. Cover with the other can of crescent rolls. Melt butter and stir in rest of sugar and cinnamon. Pour over top. Bake for 30 minutes . Can be served warm or room temperature.

Thirty Before Thirty: Task #3 – Palm Read

The world is full of magic. You just have to believe in it.

I have to say that my palm reading experience had a welcomed surprise outcome. For some reason I was convinced that I was going to hear some terrible news, like I had a curse on me or that my life was going to be sad and pathetic. I know, I know, way to be positive – haha not so much! I’m happy to say that I was 100% wrong about how this adventure would go.

I’ll admit I had mixed emotions about having my palm read. What if something I found out really stuck with me and influenced one of my future life choices/decisions? Would I be messing with my fate? I realized I was thinking about it too much. I needed to go in with an open mind and remember to take everything with a grain of salt.

I’ve been thinking a lot about how to approach this post. I’ve gone back and forth about whether or not I wanted to share all of what I found out during my reading. The purpose of this blog series is to share my experiences as I accomplish the items on my list. But I don’t think that necessarily means sharing all of the intimate details. So I’m going to highlight the key points of what I found out and keep the rest to myself (sorry if that seems selfish). I feel that some things may be taken too seriously and/or potentially cause doubt in my future actions/decision and I don’t want that.

Before you read what I found out you have to know that the ONLY information she had was my first name and date of birth and she looked at my hands. That’s it. The first thing she told me was, “Good or bad don’t get mad. I have to tell you everything that I see.” Then she said that I could ask 3 questions about what I wanted to know. Questions?!?! I thought that she was going to be the only one doing the talking. Oopps! I was totally not prepared for that but I worked it out.

Here is what she told me: (the cliff’s notes version)

I was born under a bright star. I was born for happiness (Could this be why I love sunglasses so much? Because my future is so bright?! Sorry, that was just too easy haha)
I’m going to live a very long, healthy and happy life. I have a solid life-line but it was interrupted when I was younger with a near death accident. (Ok – this was the one thing that didn’t make any sense. I immediately called my mom after the reading to ask her if there was some tragic accident that I had blocked out and she said no. So no clue what this was about…)
I’m a good friend. I’m always seeking to bring new friends into my life. I would rather tell people to their face rather than talk behind their back (Guess she is omitting the junior high gossip years – you know you all went through that phase!)
I’m good at my job and I have passion in what I do. My job is very important to me and those I work with value what I do. My work speaks for itself. (She was totally on-point with this! Everyone knows that I love my job and that my passion for what I do is my motivation)
I will have one life-long successful marriage full of lots of love and you guessed it…happiness! (happiness was the theme of my reading)
I’m good with kids. I enjoy spending time with children and I’m very patient with them (Again – dead on with this one! Pretty much everyone has heard me talk about my squishy (squishy= little Emerson that I babysit for) and all of the others I’ve watched over the years. I heart kiddos, that’s no secret)

Summary of my reading: only good things for my future: a long, happy, healthy life and a successful career. Hooray! Works for me! I was totally amazed that she knew I loved my job and have passion in what I do and that I love children –all of that from very little info. Those things being so accurate only made me believe all of the other stuff even more!

My friend Liz’s reading solidified my belief that this lady was the real deal – she told Liz that she saw an upcoming trip and that she wouldn’t be traveling alone. TRUE – Liz is leaving town in a few weeks with a few friends. SERIOUSLY?!? How could she know that just from her name, date of birth and her hands?! CRAZINESS! $50 was well spent. 100% satisfied customer. I’m totally going back!

Now it’s time for deep thoughts by Courtney…

Henry David Thoreau said, “Happiness is like a butterfly. The more you chase it, the more it eludes you.” I disagree. Yes, we all lose our happy from time to time. Let’s be real, there is no such thing as a person who is always happy (except those heavily medicated). But why sit around and wait for your happy to come to you? In business if you sit back and wait for opportunity to show up at your door, you’ll be out of business. So why is life any different? I guess what I am trying to say is that hearing I was “born for happiness” reminded me happiness is always with me. I just need reminders every now and then. We all do. My #30before30 list is the perfect reminder (30 reminders actually…) to keep happy in the forefront. It’s helping me find my way through the crazy day-to-day and forcing me to make time for me. Life can get pretty crazy, happiness is a must. I hope that along the way I can inspire others to find their own happy.

I’m going to end this post with a quote from one of my favorite shows (I’m not telling you which show because 99% of you reading this will totally make fun of me. Not like you can’t Google it and find out for yourself…). I want you to read it and really listen to what it says. This was from an episode in 2008, clearly it stuck with me. Who knew having my palm read would lead to so much deep thinking…

“Make a wish and place it in your heart. Anything you want, everything you want. Do you have it? Good. Now believe it can come true. You never know where the next miracle is going to come from. The next smile, the next wish come true. But if you believe that its right around the corner and you open up your heart and mind to the possibility of it, to the certainty of it, you just might get the thing you’re wishing for. The world is full of magic. You just have to believe in it. So make your wish. Do you have it? Good. Now believe in it, with all of your heart.”

Simply Sunday: Doritos Chicken Casserole

Simply Sunday: Recipes from friends, family, and favorite cookbooks

Sing to the Lord a new song, his praise from the ends of the earth, you who go down to the sea, and all that is in it, you islands, and all who live in them. Isaiah 42:10

Doritos Chicken Casserole

1 cup or more cooked, chopped chicken

1 (7 oz.) pkg. Doritos (Nacho Cheese or Taco flavor)

1 can cream of chicken soup

1 soup can of milk

1 Tablespoon or more of chopped, jalapeno pepper

1 med., chopped onion

3 Tablespoons of margarine

1 small pkg. of Velvetta cheese

Brown onion in margarine and add soup, milk, pepper and cheese. Then add chicken and cook in skillet until cheese melts. In a well greased baking dish, add a layer of meat then layer of Doritos, alternating each. Bake at 400 degrees for 15 to 20 minutes.
